Sweet treat
Mom and I went to Campbell’s Orchards to buy some apples and pears for Thanksgiving.
Whenever I go, I always have their apple fritters. They are so yummy and I think they are frying them all day because they are always so fresh. If you’re really lucky they might be still warm. It always smells so nice there. I decided to make apple fritters for Thanksgiving. I have a small table top fryer at home but you can do them in a pot of oil on the stove. You don’t even need a really big pot because they float so it doesn’t have to be too deep. They were quick and easy to put together and we kept eating them standing in the kitchen as soon as we tossed them in the sugar. Mine were nowhere as sweet as theirs but we enjoyed them. I thought the next time I made them I would grate some cheddar into the batter cause they were almost savoury. Do go to Campbell’s and try their fritters, they have a crunchy glazed consistency that is really, really good
Apple fritters
3 large golden delicious apples
2 1⁄4 cup all-purpose flour
2 teaspoons baking powder
1⁄4 teaspoon grated nutmeg
Pinch of salt
1⁄2 cup granulated sugar
3 large eggs
1⁄2 cup milk
1 lemon juiced
Canola oil for frying
1⁄2 cup granulated sugar
1 tablespoon ground cinnamon
Peel and core the apples and then dice small. In a large bowl; combine flour, baking powder, nutmeg, and salt. Stir in apples to coat well. In another bowl, whisk sugar, eggs, milk and lemon juice. Stir the apples and flour mix into egg mixture until completely blended. Let batter rest 10 minutes while oil is heating to 350°F. In another bowl stir together sugar and cinnamon. Drop the batter in the hot oil by a tablespoon in batches, do not crowd fryer. Cook 4 minutes, turning halfway, until golden brown. Drain on paper towels briefly, then toss the fritters in cinnamon sugar while still hot. Makes about 30 fritters
