Knocked back on the heels
I recently read about the national drink of Turkey called “Arak” also known as “Raki” (not to be confused with Aragh, a version of vodka that is common to Georgia, Armenia, and Iran).
Well known throughout the Middle East, this alcoholic beverage is distilled from grapes, botanicals and aniseed, which gives a distinctive flavor that is shared with ouzo from Greece, zambucca from Italy, and Pernod or Ricard (even absinthe) from France. It is interesting is that this alcoholic beverage is commonplace in primarily Muslim nations where it is accepted within the framework of their local culture.
As with Pernod or Ricard, ice and water is added to Raki in the proportion of one part Raki to two parts water. The ice is added after the water preventing the separation of oils from the liquid, whereas Pernod can be poured over ice. The addition of the water and ice creates a milky, anise-flavored, and very refreshing beverage reminiscent of a Pernodand- water found in a beach café in the south of France.

I was truly knocked back on my heels with the power of this wine. All aspects, from nose to palate, showcase the powerful potential of County wines.
