A wee Christmas treat

This wee treat is so quick and effortless that it’s almost embarrassing to have a recipe. I wanted to make it with feta, but it was too crumbly and couldn’t hold the pretzel so I went with the brie, which was delicious but not necessary in my fridge as often as feta is. The simplicity of the toppings was brilliant. You could embellish it with a sprinkle of dried chilies or herbs.

Brie Christmas tree bites

200-300g brie wheel

4 teaspoons pesto

3 mini sweet peppers: red, yellow, orange

8 mini pretzel sticks

Cut the brie into eight equal triangles. Put the triangle piece on its side and slice down the middle and place each one skin side down so the creamy middle is facing up. Cut the peppers in half if using minis or in quarters if using regular size peppers. Remove seeds and membranes with paring knife. Spread ¼ teaspoon pesto over top of each triangle. Use the small round end of a piping tip to make round pieces with the different coloured peppers. Carefully put pepper rounds on top of pesto to look like little lights. Snap the pretzel in half and insert the cut end into the middle of the wide part of the brie. Use a mini spatula to transfer to a serving plate. Garnish with greens like parsley or rosemary if desired.

Makes 16 mini tree bites.
