Wine tour

I know I promised to continue with my history of wine; however, we were caught up with finishing the restaurant renovations and getting ready for our wine tour in Chile. We arrived safe and travel weary. Right off the plane, we had our first wine tour at Casas del Bosque—a small, boutique winery—in the Casablanca Valley, just outside of Santiago. This is the newest wine region in Chile which, similar to Prince Edward County, best produces cool climate varietals. We tasted a superb Sauvignon Blanc, which had a flavor profile of a young New Zealand wine but similar to the Grange Sauvignon Blanc. There was a decent Chardonnay with a little too much exposure to wood; and a well-rounded, cold climate, Pinot Noir. The Pinot vines were about 18 years young and demonstrated the potential of Pinot Noir in PEC. I tasted an exceptional Syrah that, for me, was a true delight. This wine was well balanced on the nose with an old world style on the palate. We have a rather hectic schedule of wine discoveries, as we will be visiting many wineries in Mendoza, Argentina as well as Chile. I will keep you posted.

I suggest pairing Lili’s salmon dish with a Prince Edward County, Rosé or Pinot Noir to complement the bright, robust flavours. Buen Provecho (Enjoy)!
