The three sisters
We have been growing fava beans in the garden for a few years now and they are quite delicious. They are a little more work to prepare, but well worth the effort. We have been eating them just tossed in herb butter, but last week I felt like making succotash so I looked up some recipes. I have made a lot of succotash at work, but it’s been awhile and none of the recipes I looked at seemed familiar. I thought it was the three sisters: corn, squash, and beans, but none of the recipes had squash. A lot of the recipes had bacon, which I don’t ever remember using, though it seemed like a good idea. I probably made it vegetarian at work. A lot of the recipes had okra, which I would have liked to try, but I didn’t want to shop. I preferred to just use what I had already in my pantry and garden.
Succotash-ish
4 oz. double smoked bacon, cut in
1/2-inch slices
1 medium onion, sliced
1 bell pepper, diced (2/3 cup)
4 cloves garlic, minced
1 cup cherry tomatoes, quartered
2 cups fava beans, cooked and peeled
2 cups cooked corn kernels
Kosher salt and freshly ground black pepper
1 tablespoon fresh thyme
2 tablespoons apple cider vinegar
1/4 cup minced chives
In a large pan over medium-high heat; cook the bacon until almost crisp. Add the onion and pepper to the pan and cook until softened, about 3-5 minutes. Add garlic and cook, stirring for a minute or two. Add the tomatoes, fava beans, and corn and cook for about 10 minutes, stirring occasionally.Season with salt and pepper. Stir in the thyme and vinegar, cook for another 2-3 minutes. Take off heat and sprinkle on chives. Makes 6-8 servings.
